There's something in the air, and it's adobo: adobo with beer, adobo with cinnamon, adobo with ginger, adobo with oregano, adobo with lots and lots of grease. And Joffin-Mari, where's the adobo negro recipe you promised? (Can't vouch for all the other ingredients, but the grease is crucial; the Mexican version, I think, involves ancho chiles, onions and oregano.) Even Eileen is volunteering to host an Adobo Sampler Party!

adobo negra
2 pounds pork butt chunk cut in 1 1/2 inch cubes
3/4 cups yamasa light soy sauce
1/2 cup balsamic vinegar
2 tbsps crushed garlic
combine in a pot and marinate overnight
put bayleaf,peppercorn and/or red chili flakes
cook for 20 minutes covered.cook for another 20 minutes uncovered.
i prefer to have a bit of sauce, but not too soupy naman.
this dish is heaveanly with cabbage kimchi and salted eggs-tomato-red onion-salad and of course kanin!!!!
